Whole Wheat Flax 'n Apple Muffins


  • 1/3 to 1/2 cup flax seed, ground
  • 1 and 1/2 cup whole wheat flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 1/2 cups apples, finely chopped 
  • 3 tablespoons vegetable oil
  • 1/2 cup milk
  • Applesauce
  • Cinnamon
  • Raisins
  • Oatmeal

 
Preheat oven to 400°F.
Blend flax seed, both flours, sugar, baking soda, baking powder, and salt in a bowl.
Add egg, oil, milk, applesauce, apples, & cinnamon.
Fill muffin tins 2/3 full and bake for 18-20 minutes or until top springs back when touched
